
Spiced Pineapple with Whipped Cream Cheese Yogurt and Ginger Biscuits

Ingredients
For Pineapple
- 1 pineapple
- 1 tsp Chinese five-spice
- 2 tsp lemon zest
- 1 tsp pink peppercorns crushed
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1 tsp allspice
- 200 ml white wine
- 100 grams soft, dark, brown sugar
For Whipped Cream Cheese Yogurt
- 250 grams cream cheese
- 100 grams natural yogurt
- 1 1/2 tbsp vanilla yogurt
- 1 star anise grated
- 100 grams ginger biscuits (cookies) crushed
Instructions
For the Pineapple
- Peel the pineapple.
- Mix all of the other ingredients together, place everything into the bag, to be put into the vacuum, to seal the bag.
- Seal and cook sous vide at 185°F for 12 hours.
For Whipped Cream Cheese Yogurt
- Beat all the ingredients together until smooth and silky, set in the fridge overnight.
- Build the dish and top with the crushed ginger biscuits.
